They used real live musicians to record the
strings on Kashmir. The technology available to
reproduce strings at that time (1975) was
primitive compared to today and couldn't have
reproduced strings that sound that good. I think
this is part of the reason why live versions of
Kashmir sounded somewhat cheesy. The mellotron
that JPJ used live was a toy compared to today's
digital technology. 
As far as your last question, I don't know who
the musicians they used were. They aren't
credited on the album and I've never heard of
their identities being revealed. That was pretty
much the standard for highered musicians in the
70's.
